Quality Analysis of Fruit Samples by Non-invasive Method

Fruit quality is an important food manufacturing requirement, because food consumers are susceptible to any form of contamination that may occur during the manufacturing process. This includes external factors as appearance (size, shape, colour, gloss, and consistency), texture, and flavor ; factors such as federal grade standards (e.g. Apple) and internal (chemical, physical, microbial). In this experiment, the dielectric constant of free space (of air) is measured using a parallel plate capacitor according to Coulomb’s law using two parallel plates. The capacitor plate has insulator as dielectric medium. It is directly proportional to output voltage and capacitance. Placing organic fruit sample inside the capacitor plate ,it will produce voltage as output .when the fruit sample is rotten or damaged inside ,the output voltage will vary proportional to it. There will be color variation in the outer layer of the fruit due to rotten inside. As a final output, the quality of fruit sample is analyzed with noninvasive method.
